Happy early Thanksgiving to everyone!
This will be my second GF Thanksgiving, and I am looking forward to this one a bit more than last year's for one reason. Pie. Over the summer, when I was at a family wedding, they kindly provided GF pie for those of us who could not eat the wedding cake. It was so good! I was shocked! Before,we had tried many pie crusts and they had all been bad. They tasted like cardboard, or were about an inch thick and tasted like cardboard, or were overly dry and tasted like cardboard, or, you get the idea. But this crust tasted to me like 'regular' pie crust!
Lucky for us, it had been made by a family member who was a professional baker, so we could get the recipe. I have put it below. Just a tip, be sure to really mix teh dry ingredients well if you try to make it. Otherwise it does not work.

Honestly, I don't like pie, unless it is a graham cracker crust. I used to eat raw pie crust, but hated it once it was cooked. It's the same with pot pies, I don't like the crust so just used to eat the centers and nothing else. I'm kinda weird like that i guess. I'm still trying to get the courage to try to make a GF key lime pie. I used to eat the Edward's KL pies like crazy...but obviously no longer am able to
