National Pizza Day

Today, I was proud to celebrate National Pizza Day.

...Even though National Pizza Day is technically tomorrow...

I started my day with Pizza Pancakes.
Which is quite literally just one giant pancake that is a circle that you call Pizza Pancakes because if you actually made a pizza with pancakes it would be gross. :) I used Ty's pancake recipe, and though I mildy burned it, it was still good.

Lunch rolled around, and so did my Ceaser-Salad Pizza.
This one you make by brushing a pizza crust with olive oil and minced garlic and then sprinkling on some salt. This is baked in the oven until golden-brown or however you want it, and allowed to cool. Then, make up the ceaser-salad. Put the salad on top of the pizza crust. Pretty much salad with a giant crouton. YUM.

Dinner called for something special, something unique. Something like..MACARONI AND CHEESE PIZZA!!
And I know what you are thinking, probably something along the lines of EWW....but hear me out. First, make the macaroni and cheese. Then, set it aside, it is okay for it to cool down. Make the pizza the way you ordinarily would, (I might, however, forgo the pepperoni and onions, or anything other than sauce and cheese), put this in the oven until the cheese has fully melted. Take the pizza from the oven, and evenly top it with the mac&cheese. Put back in oven, and turn on the broiler. The exposed parts of the crust may turn black, but thats okay. It should be in there until the mac and cheese has browned on the top bits. Enjoy!!


For the crust, I used Udi's GF, and for the Macaroni and Cheese I used Annie's GF.

Those do sound great! =) I have had mac and cheese pizza before...however it was before my GF days at Valentino's Grand Buffett (which has a GF pizza in it's own GF spot on the bar *the manager of the buffett's has Celiac which in turn allowed the rest of us with CD a wonderful place to enjoy a pizza buffett with the rest of the family* Anyway back to the topic at hand. The CS pizza sounds really good so may try that sometime =) The pancake Pizza you could have made it more like a dessert pizza. Use GF frosting or whipped cream instead of the tomato sauce. And then added some fresh strawberries, pineapple, and/or blueberries for your topping with some shredded coconut in place of the cheese...man that sounds really yummy right now!! May try that tomorrow, way to tired right now to even think about cooking. I have yet to try the Annies Mac and Cheese...how is it in taste compared to Amy's Mac and cheese?

Wow, that does sound VERY yummy. I have not had the Amy's mac and cheese, but I really like the Annies. My non-GF parents say it tastes just like wheat-y mac and cheese, but that could be to make me feel better! :) *Note to self: Try Amy's Mac and cheese!
