Woops!

I have not posted in a while, for a simple, albeit a tad embarrassing, reason. I forgot the password to my Blogger account. Luckily, I found it this morning written on last months math test, so here we go again!

I hope December is treating everyone well so far, I plan on doing LOTS of sweet-making. I am going to try this coffee cake recipe, but with "Beth's all-purpose GF flour" instead of the wheat flour. I have had some trouble finding a 'nutlike' cereal nugget that is GF. Any Ideas?

Pre-Celiac, I was  a HUGE chocolate truffle fan, so I am disappointed that both Lindt and Ferrero Rocher truffles are not GF. *That dang barley malt powder!* Anyway, the point is that I will be attempting to make GF chocolate truffles this year, which is a first, but I figure, even if they do not turn out like truffles, the recipe is practically ALL CHOCOLATE, how bad could it be? Not very bad, is the answer!

Instead of cereal, we use hazelnut or almond meal mixed with brown sugar and butter - you can put some rice or sorghum flour in there as well to bulk it up. Works great for streusel-y crumble :)

OMG I was so upset when i found out that the lindt truffles weren't GF, I actually cried in the store!! Good luck with your coffee cake and truffles.

I too have not posted on my blog in some time. No password forgetting for me, though I have done that, I started school last week and things have just been hecktic. I am pleased to announce that I am revolutionizing my school!! They frequently are having bake sales, breakfast burritos on Sat mornings, and events with chili and hotdogs. I am (as soon as i am done with this comment) going to be writing the dean of the college. She wants to know more about Celiac, food options that they can provide, and other things they can change to help me, and those who may be GF but just not as outspoken as I am. Its a step in the right direction. I'm a bit tired of fritos and peanuts, as those are the ONLY GF options in the vending machine at my school. So maybe some change there as well.

And yes, you very rarely go wrong with something that is nearly ALL CHOCOLATE! =) Have a great holiday CC!

@Ty's Mom- Thanks for the tip, I ended up mashing some walnuts, but your way sounds a lot yummier :)
